Place the seasoned pork chops in a ziplock bag and refrigerate for about 1 to 2 hours, or overnight for more flavor.
Preheat the Camp Chef woodwind pellet smoker on the high smoke setting, aiming for a temperature between 200°F to 220°F.
Place the pork chops on the pellet grill, keeping them in the center to avoid overcooking.
Smoke the pork chops for 1.5 hours, flipping them after 30 minutes.
Check the internal temperature of the pork chops to ensure they are cooked to your desired doneness.
Transfer the pork chops to the gas sear box to sear them for a short time to add color, as the sear box can reach up to 900°F.
Brush Country Bob's barbecue sauce onto the pork chops and let it set for about 10 minutes to tack up.
Remove one pork chop to sample and check for flavor and doneness.
