In a saucepan over medium heat, add olive oil, minced garlic, and chili flakes. Cook for 10-15 seconds until garlic is translucent.
Pour in strained tomato sauce, stir, and season with dried oregano, sugar, and salt. Cook for 10-15 minutes until thickened, stirring occasionally.
Grease a rectangular baking tray with olive oil, ensuring all surfaces are coated.
Tip the risen dough into the greased tray and push it to reach the corners.
Layer pepperoni over the surface of the dough, followed by cubed whole milk mozzarella cheese, ensuring edges are covered.
Dot little pieces of Italian sausage over the cheese.
Create three lines of sauce along the length of the pizza.
Preheat the oven to 500°F and place the rack on the lowest level.
Bake the pizza for 13-15 minutes until the crust is golden and charred.
Let the pizza sit in the pan for an additional 5 minutes before slicing.
