Today, it has gained popularity across the United States, often found in pizzerias and home kitchens alike, celebrated for its satisfying texture and flavor.

Make a biga by mixing 200 grams of flour and 5 grams of dry yeast in a container.
Add 100 grams of water to the flour and yeast mixture and mix by hand for about 5 minutes.
Let the biga sit at room temperature for 1 hour, then refrigerate for 48 hours.
After 48 hours, break the biga into pieces and add it to a mixing bowl.
Add 200 grams of water, 1 teaspoon of honey, and 1 teaspoon of salt to the bowl with the biga.
Mix until the water is fully integrated into the dough, which takes about 15-20 minutes.
Cover the dough with plastic wrap and let it rest for 10 minutes.
Transfer the dough to a clean container greased with olive oil and let it rise for 1 hour at room temperature until doubled in size.
After 1 hour, punch down the dough and let it rest for another 20 minutes.
Grease an 8x8 inch pan with olive oil and place the dough in it, pressing it out to the edges.
Let the dough rest for 20 minutes at room temperature.
Prepare the tomato sauce by breaking 4-5 fresh tomatoes by hand into chunks.
Press the dough out to the edges of the pan and let it rest for another 10-15 minutes.
Spread the tomato sauce over the dough, then add shredded cheese and fresh mozzarella on top.
Sprinkle oregano over the cheese.
Preheat the oven to 450°F and bake the pizza for 15-20 minutes until the cheese is golden.
