Amish Macaroni Salad

1 pound elbow macaroni
4 hard-boiled eggs
1 small onion
3 celery ribs
1 sweet bell pepper (red)
2 cups mayonnaise
1/8 teaspoon yellow mustard
1 tablespoon white vinegar
2 tablespoons sweet relish
1/2 cup sugar
1/4 teaspoon salt

Boil 1 pound of elbow macaroni until cooked, then drain and let cool.

Chop 4 hard-boiled eggs, 1 small onion, 3 celery ribs, and 1 sweet bell pepper (preferably red) into small pieces.

In a large bowl, mix the chopped eggs, onion, celery, and bell pepper together.

Add the cooled macaroni to the bowl with the chopped ingredients.

Mix in 1/8 teaspoon of yellow mustard, 1 tablespoon of white vinegar, 2 tablespoons of sweet relish, and 1/2 cup of sugar into the macaroni.

Add 2 cups of mayonnaise to the mixture and stir until well combined.

If any egg pieces are too large, chop them down in the bowl with a spoon.

Optionally, add celery seeds if desired, although the creator prefers not to use them.
