In a pot, add about 1 pound of gungo peas.

Blend coconut and strain it, returning the strained coconut milk to the pot.

Add 2 cups of coconut milk and 1 cup of water to the pot.

Add a little salt, fresh thyme, a few pimento seeds, and 4 crushed garlic cloves to the pot.

Add pieces of ginger, cut large enough to be removed later.

Cover the pot halfway and cook the peas for about 15 to 20 minutes.

Once the peas are cooked, add 2 more stalks of scallions, twisting them to release juices, and 4 more crushed garlic cloves.

Add 1.5 cups of coconut milk and 2 teaspoons of margarine to the pot.

Add 1 scotch bonnet pepper and cover the pot, bringing it to a boil for about 5 minutes.

Add 3.5 cups of long grain rice and stir well.

Cover the pot and reduce the flame to low, cooking for about 15-20 minutes.

After 20 minutes, check the rice and remove the scallions, thyme, and pepper before fluffing the rice.
