Smoke the brisket until it reaches a core temperature of 96 degrees Celsius or 205 degrees Fahrenheit.

Wrap the brisket in tinfoil.

Place the brisket in a cooler or in an oven at 80 degrees Celsius or 175 degrees Fahrenheit. Let it sit there for at least 2 hours.

Carve the brisket against the grain.
