Cut the ripe papaya in half and remove the seeds with a spoon.
Peel the papaya, noting that the skin is hard to peel.
Grate the papaya using a grater, using the large side.
Extract as much liquid as possible from the grated papaya.
Measure 2 cups of grated papaya and place it in a pot.
Add 1.5 cups of sugar to the pot and mix until dissolved.
Add 1 teaspoon of lemon juice and 1/4 teaspoon of lemon zest to the mixture.
Cook the mixture on medium to low heat until it reaches a jelly-like texture, stirring occasionally.
Once the jelly texture is achieved, remove from heat and let it cool slightly.
Form small balls from the mixture using your hands, noting that it may still be warm.
Optionally, sprinkle sugar on the formed balls, or leave them plain if desired.
If desired, add food coloring to some of the balls and mix well.
