Cultural Context

Originating from the highlands of Kenya, matoke is a staple food made from cooking green bananas. Traditionally, matumbo (tripe) is a popular delicacy, often enjoyed during celebrations and family gatherings. The combination of these ingredients in a stuffed cup format showcases the creativity of Kenyan cuisine, blending local flavors and textures. Today, variations of this dish can be found in many East African homes, often adapted to include different meats or vegetables based on availability.

1

Pat the matoke dry before slicing it up.

2

Slice the matoke into pieces.

3

Heat cooking oil on medium heat.

4

Fry the matoke in the oil, letting it sit for about 1 minute before attempting to separate any pieces that may be stuck together.

5

Cook the matoke for about 3 to 4 minutes until golden brown, then turn them over and cook the second side for another 3 to 4 minutes.

6

Remove the fried matoke from the heat once golden brown.

7

Place the fried matoke into a mortar along with the sliced spring onions and dania leaves.

8

Add freshly cracked black pepper, salt to taste, and a quarter clove of garlic to the mortar.

9

Pound the matoke mixture until smooth but still with some texture, creating a hole in the middle without pushing through to the bottom.

10

Loosen the matoke from the sides of the mortar gently to avoid breaking it; if it breaks, mold it back together.

11

Add the pre-cooked matumbo into the matoke mixture.

12

Invert the matoke onto the serving plate, tapping gently to release it from the mortar.

13

Serve the upside down matoke cup with a side of matumbo stew.
