1/4 cup extra virgin olive oil
2 cans chickpeas
2 tablespoons lemon juice
1 tablespoon preserved lemons
1 tablespoon sumac
1 heaping cup red onion (about 100 grams)
Persian cucumbers
fresh mint
fresh parsley
1/4 cup roasted white sesame seeds
1/2 cup tahini
2 tablespoons lemon juice (for tahini)
maple syrup
salt
black pepper
