Prepare the puff pastry by rolling it out and cutting it into rectangles.
Bake the pastry rectangles until golden and puffed, about 15-20 minutes.
Allow the baked pastry to cool completely on a wire rack.
In a saucepan, combine milk and vanilla extract; heat until just boiling.
In a bowl, whisk together egg yolks, sugar, cornstarch, and salt until smooth.
Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly.
Return the mixture to the saucepan and cook over medium heat, stirring until thickened, about 5 minutes.
Remove from heat and stir in butter until melted; let cool completely.
Once cooled, fill a piping bag with the pastry cream and pipe it onto one pastry rectangle.
Top with another pastry rectangle to create a sandwich.
In a bowl, mix powdered sugar with a little water and food coloring to create a glaze.
Spread the glaze over the top pastry layer and allow it to set.
Serve chilled, optionally garnished with whipped cream.
