In a heatproof stainless steel bowl, whisk together 5 large egg yolks, 2/3 cup granulated sugar, and a pinch of salt until light and fluffy.

Heat 2 cups of half and half in the microwave until it starts to foam, being careful not to let it overflow.

Slowly add the hot half and half to the egg yolk mixture while whisking to temper the eggs.

Place the custard mixture over a saucepan of simmering water and cook, stirring constantly, until it reaches 170°F (77°C) and thickens enough to coat the back of a spoon.

Remove from heat and stir in 1 1/2 teaspoons of vanilla extract or vanilla paste, and optionally add the seeds from a vanilla bean.

Chill the custard in the refrigerator for several hours or overnight until completely cold.

Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions for about 25-30 minutes.
