Prepare fresh soy milk using a soy milk maker: add beans (with or without skin), 1/2 tsp salt, select the soy milk option, and press Start.

Wait 20 minutes for the soy milk to be ready.

Grate 1 clove of garlic and chop 1 stalk of green onion (optional).

In a bowl, combine the grated garlic, chopped green onion, Kewpie mayonnaise, and the Shin Ramyun ingredient packs (keeping the flake packet out). Mix well and set aside.

In a pot, use the freshly made soy milk instead of water to boil the ramyun.

Add Shiitake mushrooms and Bok choy to the soy milk and boil until slightly softened, removing the bok choy when it's done to your liking.

Continue boiling the Shiitake mushrooms until soft, then add the flake packet and boil until its contents are soft.

Transfer some of the soy milk broth to the bowl with the ramyun ingredients and stir until dissolved.

Boil the Shin Ramyun noodles for 4 minutes in the soy milk broth.

Transfer the cooked noodles along with the remaining broth to the bowl, stir well, and garnish with the toppings.
