Cover the yucca with water in a pot.

Boil the yucca for about 10 minutes until it starts to soften.

Pour out the boiling water and add cold tap water to the pot, a technique called 'susto' to finish softening the yucca.

Once the yucca is softened, turn off the heat and cover the pot.

In a mortar, combine 8 cloves of garlic with salt and mash them together.

Add the juice of 2 lemons to the mashed garlic.

Heat olive oil in a separate pan until hot.

Remove the pan from heat and pour in the garlic and lemon mixture carefully.

Serve the yucca with the prepared mojo.
