Grate the yuca using the smallest side of a 4-square grater for a fine consistency.
Add 2 eggs to the grated yuca.
Add 1 teaspoon of butter to the mixture.
Add finely chopped onion, habanero pepper, parsley, garlic, black pepper, and 1 teaspoon of sugar to the mixture.
Mix all the ingredients together until well combined.
Take one scoop of the mixture and shape it into a fritter in your hand.
In a skillet, heat 1/2 cup of oil to about 300 degrees on medium heat.
Add the fritters to the skillet one at a time to prevent sticking.
Cook the fritters for about 3 to 5 minutes on each side until they are nice and golden brown.
Once done, remove the fritters and place them on a plate lined with paper towels to drain excess oil.
