Welcome to the cooking episode, today we are making Nuegados de Yucca.
Use frozen whole cassava or fresh if available.
In a food processor, blend the whole cassava until it becomes a paste.
Add a teaspoon of salt to the cassava paste.
In a mixing bowl, add 1 egg, 1/2 cup of sour cream, and 1/2 cup of mozzarella cheese to the cassava paste.
Mix all the ingredients together until well combined.
Add 1/3 cup of milk to the mixture if needed for consistency.
While the oil is heating for frying, prepare the caramel sauce.
In a pot, add sugar cane (piloncillo), 1 cinnamon stick, and 5 black peppercorns to make the sauce.
Fry the cassava mixture in hot oil until golden brown, using a spoon to portion them.
Flip the cassava pieces to ensure even cooking until they are golden brown.
Plate the Nuegados de Yucca and drizzle the caramel sauce on top.
The dish is ready to eat.
