Place the yucca in a large pot and cover with water.

Add salt and bay leaves to the pot and bring to a boil over medium-high heat.

Reduce heat and simmer until the yucca is tender, about 30-40 minutes.

Drain the yucca and set aside.

In a skillet, heat olive oil over medium heat until shimmering.

Add minced garlic and sauté until fragrant, about 1-2 minutes.

Stir in chopped onion and cook until softened, about 3-4 minutes.

Add citrus juice, cumin, salt, and pepper to the skillet and mix well.

Combine the cooked yucca with the garlic sauce in the skillet and toss to coat.

Garnish with chopped parsley before serving.
