Heat a large pan over medium-high heat.
Add the log of breakfast sausage to the pan and break it up into small pieces while cooking until no pink remains, about 8-10 minutes.
Once cooked, use a slotted spoon to remove the sausage from the pan and place it into a large bowl.
In the same pan, add the frozen hash browns directly from the bag without thawing.
Season the hash browns with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
Cook the hash browns for 8-10 minutes, flipping them halfway through to brown both sides.
Remove the cooked hash browns and add them to the bowl with the sausage.
Grate an 8 oz block of cheddar cheese and set aside.
Preheat the oven to 350°F (175°C).
Spray a 9.5 by 13.5 inch baking pan with non-stick cooking spray.
In a bowl, whisk together 6 large eggs, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
Add 1 cup of milk to the egg mixture and whisk until combined.
In the bowl with the sausage and hash browns, add about 1 cup of the grated cheddar cheese and mix until evenly distributed.
Spoon the mixture into the prepared baking dish and spread it evenly.
Top the casserole with the remaining grated cheddar cheese.
Bake in the preheated oven for 30 minutes, until set and golden on top.
