Traditionally used to scoop up dips like hummus or to wrap grilled meats, pita is a symbol of communal eating and hospitality. Today, it enjoys global popularity, with variations found in many cultures, making it a versatile accompaniment to various dishes.

Sourdough adds flavor, while baking powder is a quick alternative.
Combine 1 cup of warm water, 2 teaspoons of instant yeast, and 1 tablespoon of sugar in a bowl; mix and let sit for 10 minutes until foamy.
In another bowl, combine 2 cups of all-purpose flour, 1/2 cup of whole wheat flour, and 1 teaspoon of salt; mix well.
Add 1 tablespoon of olive oil to the flour mixture and mix again.
Add the yeast mixture to the flour mixture and mix until a shaggy dough forms.
Turn the dough out onto a clean work surface and knead for 8-10 minutes until smooth.
Grease a bowl with olive oil, roll the dough in the oil, cover, and let proof for 2 hours until doubled in size.
Deflate the dough and divide it into 10 pieces; roll each piece into a ball and place on a tray, covering them to proof for 10 minutes.
Roll each piece into a 7-inch circle.
Cook the pita on a hot skillet, turning continuously until the pita puffs up and is golden and crispy.
Remove the pita from the skillet and cover with a tea towel before serving.
