Add bread flour to a large bowl.
Mix in dry yeast, sugar, and salt; stir to combine.
Add olive oil and water; mix until dough forms.
Transfer the dough to a floured surface and knead until smooth, about 10 minutes.
Place the dough in a lightly oiled bowl and cover with plastic wrap; let rise for about 1 hour or until doubled in size.
Punch down the dough to release air and divide it into 8 equal parts, rolling each part into a ball weighing about 100g.
Cover the dough balls with a towel and let them rest for another 10-15 minutes.
Preheat the pizza oven to 600°F (315°C).
Roll each dough ball into a quarter-inch circle.
Bake the dough directly on the pizza oven surface for 30-60 seconds until puffed, then flip and bake for a few more seconds.
Immediately cover the baked pita with a towel to keep them soft.
For the regular oven method, preheat the oven to 485°F (250°C) and place a baking tray upside down inside.
Roll each dough ball into a quarter-inch thick circle.
Place 2-4 pitas on the hot tray and bake for about 3 minutes or until puffed, then flip and bake for another minute until golden brown.
For the cast iron skillet method, heat a cast iron skillet over medium-high heat.
Roll the dough balls and place one pita at a time in the hot skillet, flipping every 20 seconds until ready, about 2 minutes.
