Welcome back to my channel. I'm Carlina Davis, and today we're making sweet potato honey bun cake.
Crack 4 eggs and remove the egg snot by tapping them on the counter. This is optional but recommended for moisture.
Add the eggs to the mixing bowl.
Use milk instead of water for the cake mix to enhance the flavor.
Use Betty Crocker's yellow cake mix for this recipe, not white cake mix.
Add the 4 cracked eggs to the bowl.
Add 1 cup of Daisy sour cream to the mixture.
Add 3/4 cup of vegetable oil to the mixture. You can substitute applesauce if desired.
Add 1 teaspoon of vanilla extract or vanilla bean paste for flavor.
Mix the ingredients with a cordless KitchenAid mixer until just combined, being careful not to overmix.
Roast a medium sweet potato in the oven, then mash it with a fork until smooth. This should yield about 1 cup of mashed sweet potato.
Add the mashed sweet potato to the cake batter.
(Optional) Add a couple drops of orange food coloring to the batter and mix well until the color is even.
Prepare the honey bun filling by mixing 1 cup of light brown sugar, 2 teaspoons of cinnamon, and 1 teaspoon of nutmeg in a bowl.
If using, crush about 1/2 cup of pecans and add them to the brown sugar mixture. Mix well.
Grease a 9x13 baking dish.
Pour half of the cake batter into the greased baking dish, spreading it evenly to cover the surface.
Sprinkle the brown sugar mixture evenly over the batter in the baking dish.
Pour the remaining cake batter on top of the brown sugar mixture, ensuring it covers it completely.
