Add less than 1 tablespoon of salt to the flour.
Melt 150 grams of lard and add it to the flour mixture.
Begin mixing the ingredients together, adding water as necessary until the dough comes together.
Knead the dough for about 2 minutes until it is soft and pliable.
Cover the dough and let it rest for approximately 30 minutes.
After resting, divide the dough into four equal portions.
Roll each portion into a ball and flatten it slightly.
For a simple tortilla, prick the surface lightly with a fork.
For a stuffed tortilla, take one of the flattened pieces and add a slice of ham and cheese in the center.
Fold the tortilla over the filling and press to seal, ensuring no air is trapped inside.
Create a rustic edge (repulgue) on the sealed tortilla.
Prepare the grill with low heat, ensuring the coals are not too hot.
Place the tortilla on the grill and cook for about 5 minutes, watching for bubbling to indicate doneness.
Rotate the tortilla to cook evenly, checking for a firm texture and slight browning.
Once cooked, remove the tortilla from the grill and cut it to serve.
