8 Italian sausage links, each link twisted in half
6 tbsp extra virgin olive oil
4 large potatoes, peeled and cut into big chunks
4 large bell peppers, mixed colours preferably, seeded and cut into thick strips
3 large onions, sliced thickly
2 cups cherry tomatoes
1 cup white wine
1 teaspoon dried oregano
2-3 garlic cloves, smashed
sea salt or to taste
ยฝ tsp chili pepper flakes (optional)

Preheat oven to 400 degrees โ„‰.

Place all ingredients in a roasting pan or sheet pan.

Mix well.

Cover with lid or foil and bake for 1ยฝ hour.

Remove foil, snip sausages in half. Toss gently and return to the oven for another 30 to 60 minutes or until sausage and potatoes are golden.
