Boil medium to large russet potatoes in cold water for about 10 minutes until fork-tender but not fully cooked.
Cook 4-5 pieces of bacon in a skillet until very crisp, then drain on paper towel.
Dice ham and cook in the same skillet until browned, then drain on paper towel.
Peel the boiled potatoes and grate them using a cheese grater.
Add 2 tablespoons of canola oil or vegetable oil to a large skillet over medium heat and add a pinch of salt.
Add grated potatoes to the skillet and season with onion salt, 1/2 teaspoon salt, and black pepper.
Cover and cook for about 3-5 minutes on each side until browned, checking occasionally.
Heat a jar of green chili sauce in a separate pan until boiling, then reduce to low and set aside.
Fry an over medium egg in the skillet, then prepare scrambled eggs using 3 eggs and 1/4 teaspoon water, cooking until fluffy.
Assemble bowls by adding hash browns, topping with bacon or ham, and adding the fried or scrambled eggs.
Top with green chili sauce and cheddar cheese, then broil for about 30 seconds to melt the cheese.
