Preheat the oven to 475°F and line a baking sheet with parchment paper, buttered and floured.
Crack 4 eggs into a big bowl and mix until foamy.
Add 125 grams of almond flour and sift in 90 grams of powdered sugar, mixing on medium speed for about 3 minutes until pale.
Add 30 grams of all-purpose flour and fold it in gently.
Separate 3 egg whites and beat them on high until stiff peaks form, adding 2 tablespoons of sugar while mixing.
Fold the egg whites into the batter in three batches, starting with a small amount to lighten the mixture, then adding the rest.
Fold in 3 tablespoons of melted butter.
Pour the batter into the prepared baking sheet and smooth it out with a spatula.
Bake in the oven at 425°F for 10 to 12 minutes until lightly golden and springy to the touch.
Run a small knife along the edge of the cake to loosen it, then invert it onto a wire rack to cool completely.
Prepare the coffee syrup by combining 1/4 cup of espresso, 1/4 cup of sugar, and 1/4 cup of brandy in a saucepan over medium heat, stirring until the sugar dissolves.
Chop 8 ounces of semi-sweet chocolate finely and place it in a bowl with 7 tablespoons of butter.
Set the bowl over simmering water and stir until the chocolate and butter melt together, then remove from heat and let cool until spreadable.
Mix 1 tablespoon of water with 2 teaspoons of instant espresso powder for coffee flavoring.
In a small pan, combine 1/2 cup plus 2 tablespoons of sugar and 3 tablespoons of water, and heat until the sugar reaches 238-240°F (softball stage).
Separate 3 more egg yolks and prepare to mix them into the sugar syrup.
