Quinoa, a staple of South American diets, is celebrated for its high protein content and versatility. This dish combines earthy mushrooms with nutrient-rich quinoa, making it a wholesome meal option. Today, variations abound, with many adding seasonal vegetables or different herbs to suit personal tastes.

Take 1 cup quinoa and rinse thoroughly under running water to remove debris and reduce bitterness.
Drain the excess water and transfer the quinoa to a bowl.
Thinly slice 5 to 6 mushrooms and transfer to a plate.
Roughly chop 1.5 cups spinach and keep it aside.
Heat a pan and add 1 tbsp butter, melting it over medium heat.
Add the sliced mushrooms to the melted butter and sauté on medium heat for 1 minute.
Add 0.5 tsp salt and 0.5 tsp pepper powder to the mushrooms, stirring well.
Cook the mushrooms on medium heat until they turn golden brown, then transfer to a plate.
In the same pan, add 2 tbsp olive oil and one chopped onion, sautéing on medium heat for a few seconds.
Add 4 minced garlic cloves and cook until the onions are soft.
Add 0.5 tsp salt, 0.5 tsp cumin powder, and 1 tsp red chilli flakes, stirring well with the onions.
Add the rinsed quinoa to the pan and sauté on medium heat for 1 minute.
Add 2 cups water to the quinoa, stirring once.
Cover the pan and cook on low heat until all the water is absorbed, about 20 to 25 minutes.
After 20 minutes, remove the lid to check that all the water is absorbed and the quinoa is cooked.
Turn off the flame and add the sautéed mushrooms, chopped spinach, and 1 tbsp lemon juice to the quinoa, stirring well.
Cover the pan and let it stand for 10 minutes to allow the spinach to cook on the steam.
After 10 minutes, remove the lid, give a quick stir, and serve the spinach mushroom quinoa.
