Green olives are lower in calories, while black olives are often more affordable.

Slice 5 large round tomatoes and cover a platter with them.

Add a small red onion, sliced, on top of the tomatoes.

Crumble 4 oz of feta cheese over the salad.

Add 1 cup of kalamata olives in the center of the salad.

Season with black pepper to taste and about 1/2 teaspoon of salt.

In a bowl, whisk together 1 tablespoon of balsamic vinegar and 1/4 cup of olive oil.

Drizzle the dressing over the salad.

Finish with 1 tablespoon of chopped flat leaf Italian parsley for garnish.
