Cut up one whole onion and chop one clove of garlic finely.
Chop one red bell pepper, one green bell pepper, and one yellow bell pepper.
Take small potatoes and coat them with 2 tablespoons of olive oil, tossing them around.
Measure out 1 cup of Italian cheese blend and set aside.
Prepare a pack and a half of smoked sausage, cutting it as needed.
In a skillet, heat a teaspoon of olive oil and add the mixed vegetables (onion, garlic, bell peppers).
Season the vegetables with 1/4 teaspoon of crushed red pepper and black pepper to taste, cooking until they are softened but not fully cooked.
Once the vegetables are softened, add the smoked sausage to the skillet and cook together for a few minutes.
Add the small potatoes to the skillet and mix everything together, seasoning with mixed herbs (oregano, thyme, dill) and more black pepper if desired.
Transfer the mixture to a baking dish, cover with aluminum foil, and bake in the oven at 350 degrees Fahrenheit for about 45 minutes.
After 45 minutes, remove the dish from the oven and sprinkle grated parmesan and Romano cheese on top.
Return the dish to the oven to melt the cheese, turning off the oven after a few minutes to let it finish melting.
Let the casserole sit for about 15 minutes before serving.
