1/2 cup ghee

1 teaspoon black or white cumin
1 teaspoon freshly ground dry coriander
2 large tomatoes (chopped)
2 cups water
3 small green chilies
2 cups basmati rice
1 tablespoon oil

Wash the chicken thoroughly and pat it dry with a kitchen towel.

Let the chicken sit for an hour.

Heat 1/2 cup of ghee in a pan over medium low heat.

Add the chicken pieces to the pan and turn the heat to medium high to lock in juices.

Chop 2 small onions, and add them to the pan once the chicken has a light golden color.

Add 2 large garlic cloves and 1 inch piece of ginger (both ground) to the pan after the onions have a light golden color.

Fry the garlic and onion for 2-3 minutes.

Add 3 cloves, 1 black cardamom, and 2 pieces of cinnamon to the pan.

Add 1 cup of water, 2 bay leaves, and 3-4 green cardamom to the pan.

Add 1 teaspoon of salt and 1 teaspoon of black or white cumin, and 1 teaspoon of freshly ground dry coriander.

Chop 2 large tomatoes and add them to the pan along with 2 cups of water.

Add paprika powder to darken the color of the fresh tomatoes.

Add 3 small green chilies to the pan.

Cover the chicken and reduce heat to very low, cooking for 25 minutes.

After 25 minutes, take the chicken out and set aside.

Add 3 and 1/2 cups of water to the remaining masala in the pan and bring to a boil.

Soak 2 cups of basmati rice in water for 40 minutes, washing it thoroughly.

Add the soaked rice to the boiling water in the pan and cook on medium low heat.

Cover the pan with a cloth and let it steam until the rice is cooked.

Once the rice is cooked, take out the chicken and mix the rice gently.
