Soak the cut potatoes in cold water for about 20 minutes to remove excess starch.

Drain the potatoes well and place them into a pot of simmering salted water.

Simmer the potatoes until they are tender, testing with a fork or paring knife.

While the potatoes are cooking, prepare the scallions by cutting them down the middle of the white part and slicing them on a bias.

Once the potatoes are cooked, drain them and begin mashing them.

Add the 1 pound of Irish butter and 1/2 cup of heavy whipping cream in portions while mashing the potatoes.

Continue mashing until the mixture is creamy and golden in color.

Fold in the chopped scallions gently into the mashed potatoes.
