Preheat the oven to a hot temperature.
Bake the rooster potatoes for 30 to 40 minutes until they are nice and fluffy.
Scoop out the flesh of the baked potatoes into a bowl, leaving the skins behind.
Use a plastic scraper to push the potato through a sieve into the bowl, making it light and fluffy without lumps.
Melt some Glen and Irish Country butter in a pan over gentle heat.
Add chopped spring onions to the melted butter and sweat them gently until they are limp but not colored.
Mix the fluffy potatoes with the gently cooked spring onions and butter.
Drizzle a small amount of cream into the potato mixture and mix through.
Season the mixture with salt and pepper to taste.
Serve the champ mash in a bowl and finish with a slice of Glen and Irish Country butter on top, allowing it to melt.
