6 medium (900g) potatoes
1 small bunch scallions (spring onions)
¾ cup (175ml) semi-skimmed milk

Peel the potatoes and cut them into evenly sized chunks. Place in a saucepan and cover with boiling water. Bring to the boil, cover, reduce the heat, and simmer for 15–20 minutes, until tender.

Meanwhile prepare the scallions. Wash and chop the scallions, setting aside a few of the greener pieces for a garnish. Put the chopped scallions into a small saucepan with the milk. Bring the milk and scallions to the boil and simmer until just soft.

Drain the potatoes well and put them back into the saucepan. Return to the heat for 1 minute, until all traces of moisture have evaporated.

Add the milk and scallions to the potatoes, mash and season well. Serve immediately garnished with the pieces of the scallions that were set aside.
