Japanese Curry and Chicken Katsu

Cultural Context

Japanese curry, a beloved comfort food in Japan, has its roots in Western curry introduced in the late 19th century. The dish has evolved into a unique blend of flavors, often served with rice and a variety of toppings. Chicken katsu, a breaded and fried chicken cutlet, adds a crunchy texture that complements the rich curry sauce. Today, this dish is enjoyed across Japan and has gained popularity worldwide, often found in casual dining and home cooking.

1

Peel and chop 2 carrots.

2

Peel and chop 4 potatoes.

3

Dice 1 onion.

4

Place a large pot over medium heat and add vegetable oil.

5

Add the diced onion and sauté until they start to turn translucent.

6

Add the chopped carrots and potatoes, stir thoroughly.

7

Add water and bring to a boil for 5 minutes.

8

While that's boiling, cook the rice: for each cup of jasmine rice, add 1.5 cups of water and leave to cook.

9

Stir in the Japanese curry mix and mix thoroughly.

10

While the curry is simmering, prepare the chicken: carefully remove the skin from the whole chicken.

11

Using a meat tenderizer, carefully flatten the chicken thigh fillet.

12

Prepare for breading: have egg wash, plain flour, and Panko bread crumbs ready.

13

Place the chicken into the egg wash, then into the plain flour, then back into the egg wash, and finally coat with Panko bread crumbs.

14

Add vegetable oil to the deep fryer.

15

Slowly place the coated chicken thigh fillet into the deep fryer and deep fry for 10 minutes until golden brown.

16

Carefully remove the chicken from the deep fryer.

17

In a bowl, add your cooked rice, Japanese chicken cutlet, and Japanese curry mixture. Serve and enjoy.
