Place ground beef in a dish.
Add about 1 tablespoon of Worcestershire sauce to the beef.
Season with about 0.5 teaspoons of salt per pound and add fresh ground pepper.
Fold the seasonings into the ground beef gently.
Form four equal-sized balls (about 2 to 2.5 inches in diameter).
Press each ball into a patty using parchment paper and a spatula, aiming for a quarter-inch thickness.
Place two quartered pieces of American cheddar cheese in the center of one patty.
Cover with another patty and seal the edges tightly to prevent cheese from leaking.
Season the outside of the patties with barbecue rub.
Set up the grill for medium heat with briquettes and preheat the grill grates.
Grill the burgers for about 4 minutes on each side, flipping after 3.5 minutes.
Move burgers to the indirect side of the grill to finish cooking until they reach 165 degrees Fahrenheit.
Toast the burger buns with a little butter on the grill grates for a few seconds.
Assemble the burgers starting with barbecue mayo on the bottom bun, then the burger patty, followed by onions and pickles, and top with mustard.
Serve immediately.
