Ingredients

  • 1 cup chorizo, diced
  • 1/2 cup feta cheese, crumbled
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cold water
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. 1In a mixing bowl, combine the flour and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
  2. 2Gradually add cold water, mixing until a dough forms. Knead the dough for a few minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. 3In a skillet over medium heat, cook the diced chorizo until browned and cooked through. Remove from heat and let cool slightly.
  4. 4In a bowl, combine the cooked chorizo and crumbled feta cheese. Mix well and season with black pepper.
  5. 5Preheat the oven to 375°F (190°C).
  6. 6On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles using a cookie cutter or a glass.
  7. 7Place a spoonful of the chorizo and feta mixture in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.
  8. 8Place the filled panadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  9. 9Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. 10Remove from the oven and let cool slightly before serving.
