Slice 1.5 pounds of onions using a mandolin until close to your hand, then finish with a knife for safety.
Soak the sliced onions in a bowl of water for about 5 to 10 minutes, massaging them gently to help them break down.
In a mixing bowl, combine the soaked onions (squeezing out excess water) with double zero flour and water, mixing until you have a thick batter with some clumps.
Add salt, pepper, fresh rosemary, breadcrumbs, and generous amounts of Parmesan cheese to the batter and mix thoroughly using your hands for even distribution.
Prepare an 11.5 by 17.5 inch baking sheet lined with parchment paper, generously greasing it with olive oil and sprinkling semolina flour for a crispy bottom crust.
Spread the batter evenly in the prepared baking sheet using your hands, creating dimples in the batter to aid cooking.
Drizzle additional olive oil on top of the batter and sprinkle more semolina for crunch.
Bake in the middle rack of the oven at 400°F for about 45 minutes, then switch to broil for an additional 5 to 10 minutes until crispy.
Once baked, use a tool to detach the edges while still hot, then remove the flatbread from the parchment paper.
Top the baked flatbread with fresh rosemary while it's still hot, then cut into slices.
