Nutritional yeast is dairy-free and adds a cheesy flavor.
Prepare the ingredients: diced tomatoes, tomato sauce, sugar, salt, pepper, chili powder, cumin, chiles, onion, beef broth, pepperica, green pepper, dark kidney beans, chili beans, minced garlic, and ground beef.
Heat about 1.5 to 2 tablespoons of olive oil in a nonstick skillet over medium heat.
Add chopped green pepper and onion to the skillet; sauté for about 2-3 minutes until tender.
Add 2 tablespoons of minced garlic to the skillet and sauté for about 1 minute until fragrant, then remove from heat.
Cook ground beef in a separate skillet until crumbly and browned, resembling taco meat.
Transfer the sautéed vegetables to the crockpot.
Add the cooked ground beef to the crockpot.
Add chili powder, pepperica, and 2 teaspoons of sugar to the crockpot.
Add 2.5 cups of beef broth to the crockpot, stirring to combine all ingredients.
Add salt and pepper to taste, and optionally cayenne for heat, but keep it kid-friendly.
Cover the crockpot and cook on high for approximately 3 hours before adding the beans.
After 3 hours, add the dark kidney beans and chili beans to the crockpot.
Allow the chili to cook for an additional 30 to 45 minutes until heated through.
Serve hot, optionally garnished with cheese.
