Add sugar and vinegar to the boiling water.
Open the can of jackfruit and drain the water.
Pour jackfruit into the boiling water and boil for about 10 minutes to remove briny taste.
Chop vegetables: tomato, onion, scotch bonnet pepper, thyme, and green onions.
Strain the jackfruit and let it cool down.
Gently press the jackfruit with the back of a spoon to remove excess water without breaking it apart.
Place the jackfruit in a bowl and season with vegan kitchen life all-purpose seasoning, smoked paprika, and a pinch of salt; toss gently to combine.
Heat a non-stick skillet with grapeseed oil.
Add a little Just Egg to the jackfruit as a binder and dust with cornstarch; mix gently to coat.
Place the jackfruit into the heated skillet and sear until browned on each side.
Remove the jackfruit from the skillet and set aside.
Add chopped vegetables to the skillet with no oil and cook until onions are translucent.
Add water and better than bouillon to the skillet and let it melt down.
Once bubbling, add coconut milk to the skillet to replicate the fat from chicken skin.
Add gravy master for color and black pepper to the mixture.
