Pour the egg mixture into the skillet, tilting to distribute evenly.
Cook until the edges begin to set, about 2-3 minutes.
Gently lift the edges with a spatula, allowing uncooked eggs to flow underneath.
Sprinkle cheese on top, then fold the omelette in half.
Cook for another 1-2 minutes until the cheese melts and the center is set.
Slide the omelette onto a plate and drizzle with ketchup and soy sauce.
Garnish with chopped green onion before serving.
