Preheat the oven to 350°F (175°C).
Grease a 9 by 13 inch baking dish with butter.
Chop one small onion.
Clean 8 oz crini mushrooms with a damp paper towel, trim the stems, and slice them.
Roughly chop 5 cups of baby spinach.
Heat a large sauté pan over medium heat and add 1 teaspoon of olive oil.
Add the chopped onion and sliced mushrooms to the pan, season with a pinch of salt, and cook for 6 to 8 minutes until the onions are translucent and the mushrooms are tender.
Add the chopped spinach to the pan, season with a little salt and black pepper, and turn off the heat, gently tossing to wilt the spinach.
Transfer the vegetable mixture to the prepared baking dish, spreading it evenly over the bottom.
Sprinkle 2 oz of crumbled feta cheese over the vegetable layer.
In a mixing bowl, whisk together 12 whole eggs and 1 1/2 cups of lowfat cottage cheese until combined.
Season the egg and cottage cheese mixture with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, a pinch of sea salt, and 1/4 teaspoon of black pepper, stirring to combine.
Pour the egg mixture over the vegetable mixture in the baking dish, using a fork to gently mix the vegetables into the egg mixture.
Bake in the preheated oven for 30 minutes, or until golden brown around the edges and set through the center.
Let the egg bake rest for 15 to 20 minutes before cutting into it.
Cut into six pieces and serve, optionally with Greek yogurt, cottage cheese, hot sauce, fresh fruit, or whole grain toast.
