Add 2 pounds of dried apples to a pot.
Pour in 4.5 cups of water and let them cook down for about 1 hour and 15 minutes until tender.
Stir the apples every five minutes and add more water if needed to prevent scorching.
After about 30-40 minutes, check the apples; they should be falling apart and most of the liquid absorbed.
Add 1 cup of sugar and 1 teaspoon of cinnamon to the apples and mash them with a potato masher.
Let the apple mixture cool off after cooking and set aside.
In a mixing bowl, combine 3.5 cups of all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ginger.
In another bowl, cream together 1/2 cup of shortening and 1/2 cup of sugar for about 5 minutes.
Add 1 egg and 1/2 cup of sorghum (or molasses) to the creamed mixture and mix well.
In a separate container, combine 1/2 cup of buttermilk with 1 teaspoon of vanilla extract and set aside.
Alternate adding the dry flour mixture and the buttermilk mixture to the creamed mixture, mixing well after each addition.
Preheat the oven to 350°F (175°C).
Prepare a sheet pan for baking the cake layers.
Pour the batter into the prepared sheet pan and bake until done, checking for doneness with a toothpick.
