Welcome back to Hope's Homemade Kitchen. Today, we're making lemon cilantro chicken kebabs.

The ingredients for the lemon cilantro chicken kebabs are 1 to 1 and 1/2 lbs of chicken breasts, Greek yogurt, kosher salt, olive oil, three sweet onions, cilantro, mint, lemon, ginger, garlic, and peppers.

You can use whatever kind of hot pepper you like. You'll also need some skewers for grilling. You could use wooden skewers, but they need to be soaked. I'm using metal skewers today.

Cut chicken into 1 inch pieces.

Combine 3 tablespoons of lemon juice and 1 and 1/2 teaspoons of kosher salt in a bowl.

Soak chicken pieces in the lemon juice and salt mixture for about 15 minutes.

Wash cilantro and mint leaves thoroughly in water.

Measure 1 cup of fresh cilantro leaves and add to the blender.

Measure 1/3 cup of mint leaves and add to the blender.

Seed the hot peppers and add them to the blender.

Peel and coarse chop a 1 inch piece of ginger and add to the blender.

Roughly slice 4 garlic cloves and add to the blender.

Add 1/4 cup of plain Greek yogurt and 1/2 cup of water to the blender.

Process the mixture in the blender until smooth, scraping down the sides as needed.

Pour the marinade into the bowl with the chicken and stir well.

Marinate the chicken in the refrigerator for 2 hours.

Prep the onions by leaving them in thick rounds, about 1 inch, and brushing them with olive oil.

Season the onions with a little salt and pepper.

Grill the onions first until they're almost done, then add the chicken skewers.

Spray the chicken skewers with olive oil before grilling.

Grill the onions until they are tender and brown, then check the chicken.

Ensure the chicken is cooked all the way through on medium heat.

Remove the chicken and onions from the grill once done and plate them up with orzo salad.
