Cut the lemon and rosemary.
Put the rosemary in a bowl and add lemon zest.
Grate the garlic and add it to the bowl with salt and lemon juice.
Add olive oil to the bowl and whisk the mixture.
Add the chicken thigh fillet to the marinade and allow it to marinate for 1 hour to a whole day.
Place the marinated chicken thigh fillet in a skillet or ovenproof dish.
Add the remaining marinade to the chicken and spread the herbs evenly to prevent burning.
Add diced lemon in between the chicken thighs to enhance flavor and prevent burning.
Brush the chicken with a little olive oil.
Bake in a preheated oven at 175°C (347°F) for about 35 to 40 minutes.
After 25 to 30 minutes, remove the skillet from the oven and pour the liquid back over the chicken.
Return the skillet to the oven for another 10 to 15 minutes.
