Breadfruit casserole is a beloved dish in Caribbean cuisine, particularly in Jamaica, where breadfruit is a staple. Traditionally, this dish showcases the versatility of breadfruit, often served at family gatherings and celebrations. Its creamy texture and savory flavor make it a comforting and hearty meal, enjoyed by many across the islands. Today, variations exist, with some incorporating different cheeses or spices, reflecting local tastes and ingredients.

Cut the breadfruit in half and then into quarters, removing the seeds.
Peel the breadfruit and cut it into 1-inch slices.
To steam, pack the breadfruit pieces in a steamer over boiling water and cover; steam for 40 to 45 minutes until fork tender.
To boil, place the breadfruit pieces in water with the skin on, boil, and then remove the skin before mashing.
Once the breadfruit is tender, mash it with a potato masher in a pot, using the residual heat to help break it down.
Add 3 tablespoons of butter to the mashed breadfruit.
Incorporate 1.5 cups of table cream into the mixture, adding more liquid as needed to prevent drying out.
Add granulated garlic, granulated onion or fresh onion, and garlic herb seasoning.
Mix in 1/2 cup of finely grated carrot for sweetness.
Fold in 1/4 cup of mayonnaise and sour cream into the mixture.
Add white cheddar cheese, black pepper, and salt to taste, then mash until combined.
Incorporate chopped parsley and the cooked turkey bacon into the mixture.
Add another 1/2 cup of cream and season with more salt and cayenne pepper to taste.
Transfer the mixture to a heavily buttered baking dish, compressing it down.
Top with 3/4 cup of grated white cheddar cheese.
Bake in the oven at 370°F for 40 minutes or until golden brown on top.
Garnish with chopped parsley before serving.
