Bisquick Chicken and Dumplings

2 cups Bisquick pancake mix
1 cup milk
2 tablespoons oil
1 cup carrots, diced
1 cup celery, diced
1 cup onions, diced
1 cup chicken broth
2 bay leaves
1/2 tsp salt
1/2 tsp pepper
1 lb shredded chicken

Add oil to a dutch oven.

Sauté carrots, celery, and onions.

Add chicken broth, bay leaves, and season with salt and pepper. Bring it to a boil. Reduce heat, and simmer covered for about 5 minutes or until vegetables are tender.

Combine Bisquick mix and milk in a mixing bowl. Mix until just combined.

When the vegetables are tender, transfer them to a plate.

Spoon out a piece of dumpling dough and drop it into the soup. Repeat this process until you’ve used up all the Bisquick dough. Simmer for about 15-20 minutes or until the dumplings are fully cooked.

Add shredded chicken and vegetables into the broth. Season with more salt and pepper if needed, and cook for about 3 minutes or until heated through.
