Pan de Yuca

Cultural Context

Originating from the indigenous communities of Colombia, Pan de Yuca is a beloved snack made from yuca flour and cheese. Traditionally enjoyed with coffee, these cheesy bread rolls are a staple in Colombian households. Today, they are popular in various Latin American countries and have found a place in international cuisine, often served as appetizers or snacks.

COCOother
6 servings
Servings4
2.5 cups tapioca flour
1 teaspoon baking powder
2 eggs
1 cup feta cheese, finely grated
0.5 cup mozzarella cheese, grated
1 cup butter, softened
salt, to taste
1

Grate the feta and mozzarella cheese finely.

2

In a bowl, add 4.5 cups of tapioca flour, 1 teaspoon of baking powder, and a pinch of salt; mix well.

3

Add 1 cup of softened butter and 2 eggs to the flour mixture.

4

Mix until a dough starts to form; if too dry, add 1 teaspoon to 1 tablespoon of milk as needed.

5

Continue mixing until the dough forms a ball; no milk was needed in this case.

6

Preheat the oven to 375°F; adjust to 425°F if necessary based on your oven's performance.

7

Prepare a sheet pan with parchment paper.

8

Take golf-sized portions of dough and roll them into balls; place them on the parchment paper.

9

Roll all the dough into balls; a total of 12 balls should be formed.

10

Bake the dough balls in the oven for 7 minutes, then check for progress.

11

If the bottoms are golden but tops are pale, broil for 1 minute to achieve a golden color on top.

12

If they are not golden on the bottom, leave them in for a few more minutes while monitoring closely.

13

After baking, broil for 1 minute on high to achieve a golden top.
