Mix 1 cup of warm water with 1 tsp of active dry yeast and let sit for a couple of minutes until bubbles form.
Add 1 tsp of kosher salt, 1 tbsp of sugar, and 2 tbsp of olive oil to the yeast mixture and mix.
Add 2 1/4 cups of all purpose flour and mix with a wooden spoon until just combined.
Knead the dough gently a few times, then form it into a ball and transfer to a greased bowl.
Cover the bowl and let the dough rest for 10 minutes.
Drizzle olive oil over the dough, stretch the edges, and fold them back into the center. Repeat this stretching and folding 3 more times, resting for 10 minutes in between each stretch.
After the final stretch, cover and allow the dough to rise for 1-2 hours until doubled in size.
Prepare the oranges by cutting off the ends and peeling them, then slice into thin rounds.
Punch down the risen dough to release air, then transfer to a greased and lined baking sheet.
Gently press and stretch the dough into a rectangle, resting for 10 minutes if it feels stiff.
Cover the dough and let it rise for another 30 minutes until fluffy and filled out to the shape of the pan.
Drizzle more olive oil over the dough and make small indents with your fingertips.
Lay the orange slices on top in a pattern, drizzle with more olive oil, and sprinkle with sugar and a few pinches of salt.
Bake in a pre-heated 480 degree oven for 10 minutes, then reduce the heat to 425 degrees.
Sprinkle crumbled feta and sliced almonds over the top and return to the oven at 425 for another 10 minutes until browned.
Drizzle the top with honey, slice into pieces, and serve.
