Start by adding 250 g of bread flour to a large bowl.
Add 2 tablespoons of sugar to the flour for sweetness and to feed the yeast.
Incorporate 11 g of black cocoa (about 2 tablespoons) for deep chocolate flavor.
Add 1 teaspoon of salt to the mixture for flavor and to slow fermentation.
Pour in 256 g of warm water (about 100°F) and 1 tablespoon of olive oil.
Add 1 teaspoon of vanilla extract to enhance flavors.
Mix the ingredients using a paddle attachment on low speed until combined.
Scrape down the sides of the bowl to ensure all ingredients are incorporated.
Let the dough rest for 20 minutes to hydrate the flour and cocoa.
After resting, mix the dough on medium-high speed for about 15 minutes to develop gluten structure.
Add 170 g of semi-sweet chocolate chips and mix on medium-low speed for about 1 minute to incorporate.
Transfer the dough to a bowl and cover it to rest in a warm spot for about 1 hour.
Prepare the baking pan by spraying it with pan spray and adding 2 tablespoons of olive oil, swirling it around the bottom and sides.
Add the dough to the greased pan, using olive oil on your hands to prevent sticking while pressing it into the pan.
Let the dough rest again in the pan before baking.
