Prepare the chocolate pastry cream in advance.
Mix 1 stick of room temperature butter with 3/4 cup packed light brown sugar until smooth.
Add a pinch of salt to the mixture.
Incorporate 1 cup of all-purpose flour into the butter and sugar mixture until it resembles cookie dough.
Roll out the dough between two sheets of parchment paper to about an eighth of an inch thick and chill for 10-15 minutes.
In a saucepan, combine 1/2 cup whole milk, 1/2 cup water, 7 tablespoons butter, 1/2 teaspoon kosher salt, and 1 tablespoon sugar over medium heat.
Once melted, add the flour mixture all at once and stir rapidly until a dough forms.
Let the dough rest before adding eggs one by one.
