Start by making the sauce: combine 3/4 cup soy sauce, 1 3/4 cups water, 1/2 teaspoon ginger powder, 1/4 teaspoon garlic powder, 6 tablespoons brown sugar, and 2 tablespoons honey in a bowl.

Mix the sauce well until all sugar and honey dissolve.

Pour about 3/4 cup of the sauce mixture over chicken tenderloins in the crock pot.

Cover the crock pot and set it on low for 4 to 6 hours.

While the chicken is cooking, prepare the vegetables: start by chopping carrots and adding them to a pan with a little vegetable oil, covering the pan to steam them.

Once the vegetables are almost done, add chopped zucchini to the pan and cover to cook for a few more minutes.

In a separate saucepan, heat the remaining teriyaki sauce over medium-high heat and add 1/4 cup water and 2 tablespoons cornstarch, mixing well.

Once the sauce is warm, add it to the saucepan and whisk until it thickens, then reduce heat to low.

When the chicken is done cooking, shred it using two forks.

Cook rice using a rice cooker or stovetop as per your preference.

If not serving immediately, keep the shredded chicken in the crock pot to stay moist in the juices.
