Chop vegetables the night before for convenience.

In the slow cooker, add chopped onion, celery, carrots, and zucchini.

Prepare a roux by melting 1/2 cup of unsalted butter in a separate pan and adding flour to it.

Cook the flour in the butter until it's not pasty, then whisk in 2 cups of milk.

Add 2 teaspoons of poultry seasoning and 1 teaspoon of thyme to the mixture.

Add 2 chicken thighs to the slow cooker along with 1 cup of rinsed wild rice.

Pour in 6 cups of chicken broth (1 box is 4 cups plus 2 cups).

Set the slow cooker to low for 7-8 hours or high for 3-4 hours until the chicken is cooked through.

At the end of cooking, shred the chicken in the slow cooker and stir everything together.
